NONI, Valletta, Malta
Nestled in the heart of the Mediterranean, Malta is a treasure trove of history, culture, and culinary delights. We had the pleasure of dining at a Michelin-starred restaurant that perfectly encapsulates the island's rich gastronomic heritage. ‘Scottish’ and I arrived at NONI, 211 Republic Street, Valetta around 6pm in the evening as we had a early start back to the airport the next day.
From the moment we stepped inside, we were enveloped in an atmosphere of understated elegance. The restaurant’s decor, a harmonious blend of modern chic and classic sophistication, set the stage for an extraordinary dining experience. As we settled into our seats, the anticipation was palpable.
The evening began with large, colourful and fruity mock-tails.
Snacks, including a Black Olive presented on a wooden spoon, instructed to eat whole and in one mouthful, you will have to try it yourself to find out the insanely delicious secret!!
Then onto Fish Consume Tea, to be sipped, just like a good cuppa, served with homemade bread and butter, the balance of flavours was a promise of the culinary journey ahead.
Other delights were Humble Chicken, Mediterranean Tart drizzled with 30 year old Balsamic, Aged Acquerello Risotto, Pagnu, courgette flowers, sea urchin, fish bone and citrus sauce, each mouthful a mind blowing experience.
No Michelin-starred meal would be complete without a decadent pudding, and NONI did not disappoint. The Figs, fig leaf, pistachio and sorbet was a revelation. Each ingredient so artfully plated. Then followed by exquisite petit Fours including nougat, flower shaped jellies and a chocolate selection.
Beyond the mouthwatering dishes, what truly set this meal apart was the impeccable service. The staff were attentive, knowledgeable, and passionate about the food they served. Each course was presented with a detailed explanation, enhancing the overall dining experience.
As we left NONI, our hearts (and stomachs) were full. This Michelin-starred gem in Malta not only showcases the island’s culinary prowess but also its ability to innovate while honouring tradition. If you ever find yourself in Valletta, a meal at NONI is an absolute must—an experience that delights the senses and lingers in your memory long after the last bite.
